6 cups zucchini, sliced
1/4 cup chopped onions
1 can cream of mushroom or cream of chicken soup
1 cup sour cream
1 8-oz box of stuffing mix
1/2 cup butter, melted
Mix stuffing with melted butter. Put one-half of stuffing in 12 x 7 1/2 inch pan. Mix zucchini and onion with cream of mushroom soup and sour cream. Put vegetables on top of stuffing. Cover with remaining half of stuffing. Bake at 350 degrees for 30 minutes or until zucchini is soft.
Variations:Add chopped fresh basil to zucchini and onion mixture. To speed up baking, saute vegetables for a few minutes before mixing with soup and sour cream.
